Does anyone have some suggestions/recipe ideas for brown bagging vegetarian?

Fri, December 15, 2006 - 11:14 PMI just blended up a big bowl of homemade hummus. I'm planning on spreading it on pita bread or a tortillia and adding spinach, tomatoes, onions, (whatever I've recently picked up from the farmers market), and making a wrap. Very easy.
Avocado instead of hummus could make for some nice variety. -

Mon, December 18, 2006 - 10:18 AMI really like making mock-tuna sandwiches. The mock-tuna is made from garbanzo beans mashed with veganaise, dijon mustard, a little water, some tahini, paprika, celery seed, tamari/braggs, or whatever else you like. I've also added finely diced onion, celery, and pickle before for a little kick. It's great on toasted bread for a warmer sandwich, too! -
